Lab Cafe Opening Soon in Rockville

Eatery to occupy former Ev & Maddy's space

Updated 12 p.m. Friday: A bubble tea cafe is set to open in the former space of a French bistro in downtown Rockville.

Lab Cafe will open in mid-July at 101 Gibbs St., owner Ethan Chen said Friday.

The cafe will mostly serve bubble tea, but will also sell coffee and pastries, all of which will be made fresh in-house, Chen said. It seats about 30 people at individual tables, community tables and couches. The Rockville eatery will be Lab Cafe's first location.

Chen said the interior has been completely remodeled and painted a brighter color. The cafe is now hiring, according to a sign on the storefront.

Next to Little Dipper Hot Pot House that opened earlier this year, the cafe takes over the space of the now-closed Ev & Maddy's, a bistro owned by an Olney couple that served a French menu of entrees and soups since it opened in February 2015. The space has been a revolving door for restaurants as No. 82 Steak Out closed there after less than a year just before Ev & Maddy's opened and Tippy's Taco House operated there for two years before that.
